A friend of mine is struggling. She was recently diagnosed with Celiac’s Disease after years of suffering. At first, she was relieved to finally have some answers, but she quickly realized she would have to change her bread-heavy diet. She also *loves* sushi, but since sushi rice, imitation crab and some rice wine vinegars all have gluten in them, she was skipping one of her favorite foods.
Her situation called for some food experimentation. What I came up with is a grain-free, veggie-loaded sushi roll. This version includes fish, but you could leave it out or replace it with another protein source to make it vegan.
Ingredients
Nori (seaweed wraps)
Cauliflower or Cauliflower rice (2 cups)
1/2 cup gluten-free rice vinegar (If you’re GF, check the label!)
1/4 cup sugar
2 tbsp. oil of your choice (I like avocado oil best)
Pinch of salt
Cucumber, sliced
Avocado, sliced
Canned, cooked or fresh fish (optional)
Any other fillings (optional)
Coconut aminos (for dipping)

Recipe Instructions
- Rice your cauliflower. I use the rice attachment on our food processor, but you could also use a cheese grater if you wanted to get a nice arm workout. Buying fresh cauliflower rice works too.
- Bake the cauliflower rice. Preheat oven to 425. “Massage” the oil into your fresh cauliflower rice and spread it in a thin layer across two baking sheets. Bake for 25 minutes or until slightly golden.
- Make your “rice” into “sushi rice.” Combine the rice vinegar, salt and sugar in a large pan and heat on low/medium until the sugar dissolves. Add your cauliflower rice to the pan and “stir fry” until the liquid has been absorbed.
- Make your rolls. Lay out the bamboo mat and a sheet of nori. Spread out the rice in a thin, even layer. Place the cucumber, avocado and other fillings in a line closer to one end. Use the bamboo mat to roll it up. Repeat until your “rice” and toppings are used up.
- Let the rolls sit for a few minutes, then slice into rounds.
- Serve with coconut aminos, wasabi, ginger and any other sushi extras.

Bottom Line
Cauliflower rice is never going to taste as satisfying as real rice, but this is a pretty good substitute, and it has the nutrition benefits of extra veggies.
