Murder Cakes

These little cakes are perfect for Halloween or any time you want to make a dramatic entrance. This is definitely not a health food, but my philosophy is that a little treat now and then never hurt anyone.

For the Cake

Simple and delicious. Substitute with a vegan option if you prefer.

For the Icing

  1. Whisk 1 c. powdered sugar, 2 tsp, corn syrup and 2 tsp. water together. Add water by the 1/2 tsp. for a drizzly texture. Done.

For the “Broken Glass”

The first time I tried this, it burned. Don’t be like me—buy or borrow a candy thermometer.

  1. Combine 1 cup sugar, 1/3 cup light corn syrup and 3/8 cup water in a saucepan. Heat on low/medium until it comes to a boil, then insert your candy thermometer.
  2. Stir slowly until the candy thermometer reads 300, then remove from heat.
  3. Let the candy cool in the pan until it stops bubbling. At that point, you can add flavor extracts or food coloring, but work fast so it doesn’t set in the pan.
  4. Spread the mixture on a silicone mat on a baking sheet with *raised sides* (unless you like scraping hard candy off your counters!). You can also use aluminum foil with non-stick spray.
  5. Make sure it’s a thin layer and wait for it to set.
  6. Once the candy has hardened, pick up the pan and slam it on the counter top until it breaks into “shards.” I thought this was *very* satisfying.

For the Presentation:

  1. Cut the cake into cubes and place on a cooling rack over a cutting board.
  2. Drizzle the icing over the cake cubes
  3. Insert the “shards of glass” in an artful way.
  4. Drip red food coloring over the “glass” and make sure a bit gets on the icing.
